Beef stroganoff is a classic comfort dish that became a dinner party favorite in mid-century America. This easy weeknight version uses ground beef instead of steak, so it's budget-friendly and on the table in about 30 minutes.

Why ground beef?

Traditional stroganoff uses strips of tender beef like sirloin. Ground beef is faster, cheaper and kid-friendly. If you prefer steak, use 1 pound of thinly sliced sirloin, sear it quickly in batches and add it back at the end.

The key to a creamy sauce

Use room-temperature sour cream and stir it in over low heat at the very end. Boiling sour cream can make the sauce separate.

Easy recipe for two

Cooking for two? Halve everything: 4 ounces noodles, 1/2 pound beef, half an onion, 4 ounces mushrooms, 1 tablespoon flour, 3/4 cup broth and about 1/3 cup sour cream. Use a medium skillet. The cooking times stay about the same.

Serving ideas

  • Serve over mashed potatoes or rice instead of noodles.
  • Pair with steamed green beans or a crisp salad.

Storage

Refrigerate leftovers for up to 3 days. Reheat gently over low heat with a splash of broth.

Instructions

  1. Cook the egg noodles according to the package directions. Drain.
  2. Meanwhile, brown the ground beef in a large skillet over medium-high heat until no longer pink (160°F), breaking it up. Drain excess fat and transfer to a plate.
  3. Melt the butter in the same skillet. Add the onion and mushrooms and cook until the mushrooms are browned, about 6 to 8 minutes. Add the garlic for 30 seconds.
  4. Sprinkle in the flour and stir for 1 minute. Gradually whisk in the broth, Worcestershire and mustard. Simmer until thickened, about 3 minutes.
  5. Return the beef to the pan. Reduce heat to low and stir in the sour cream. Do not let it boil, or the sauce may curdle. Season with salt and pepper.
  6. Serve over the noodles, sprinkled with parsley.
