Sheet-pan dinners are a lifesaver on busy weeknights: one pan, a few minutes of chopping and the oven does the rest. This lemon garlic chicken comes out juicy and bright, the potatoes get crispy edges and the broccoli turns sweet and lightly charred, all on a single baking sheet.

Why chicken thighs?

Boneless, skinless chicken thighs are more forgiving than breasts. They have a little more fat, so they stay juicy at high oven temperatures and won't dry out if they cook a few extra minutes. They're usually less expensive, too. You can use breasts. Just cut them into even pieces and start checking them a few minutes earlier.

The key: give the potatoes a head start

Potatoes take longer to cook than chicken or broccoli. Roasting them alone for 15 minutes first means everything finishes at the same time, so you don't end up with crunchy potatoes or overcooked chicken.

Tips for crispy, not soggy

  • Don't crowd the pan. If everything is piled up, it steams instead of roasts. Use two pans if needed.
  • Use a rimmed baking sheet, preheated if you like extra crispiness.
  • Place potatoes cut side down for maximum browning.
  • Use a thermometer. Chicken is safely cooked at 165°F, the USDA minimum for poultry.

Swaps and variations

  • Use green beans, bell peppers or Brussels sprouts instead of broccoli.
  • Swap the oregano for Italian seasoning or herbes de Provence.
  • Add a sprinkle of feta and a drizzle of tzatziki for a Greek-style twist.
  • Use sweet potato cubes in place of baby potatoes.

Meal prep and storage

Divide leftovers into containers and refrigerate for up to 3 to 4 days. Reheat in the oven or an air fryer at 375°F to keep the potatoes crisp. The microwave works too, but the potatoes will soften.

Instructions

  1. Heat the oven to 425°F. Toss the potatoes with 1 1/2 tablespoons olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper on a large rimmed baking sheet. Spread cut side down and roast for 15 minutes.
  2. Meanwhile, whisk 1 1/2 tablespoons olive oil with the garlic, lemon zest, lemon juice, oregano, paprika, 1/2 teaspoon salt and 1/4 teaspoon pepper. Add the chicken and toss to coat.
  3. Toss the broccoli with the remaining 1 tablespoon oil and 1/4 teaspoon salt.
  4. Remove the pan, push the potatoes to the edges, and add the chicken and broccoli in a single layer.
  5. Roast 20 to 25 minutes more, until the potatoes are golden and the chicken reaches 165°F on an instant-read thermometer.
  6. Squeeze extra lemon over everything, sprinkle with parsley and serve.
